Tasting Notes: Nose offers aromas of toffee, sweet corn and orange zest. The entry is both peppery and vegetal, with a woodsy depth. The finish is surprisingly long, rich and persistent with notes of bitter chocolate and brown sugar. Mash: 60% heirloom corn, 30% Hazlet rye and 10% malt barley.

We hand pick very select barrels to blend using a French Armagnac process and then finish for 8 months in Armagnac casks imported from France. Rhine Hall Unaged Cherry
750ml Bottle - Chicago - 40% ABV From the distillery: For our Cherry Brandy, we use a tart style of cherry commonly found in Michigan and Wisconsin. The cherries are smaller and less sweet than most of the varietals we think of when we purchase cherries from the grocery store. We work to make sure that the pits are extracted from all of the cherries so that there are no off or bitter flavors that transfer into the eau de vie. The pits are added back into the mash during the three week fermentation period, which helps to create a deep and rich spirit with lots of dimension.

Chicago - 750ml Bottle - 40% ABV sourced from local wineries, however the grapes are predominantly acquired from the west coast of the USA. We do not add sugar to the pomace — we simply add water to rehydrate before distilling, giving us a smooth, floral Grappa with a clean finish. Another way to think of this product is as pomace brandy. Pomace is everything left after winemaking: grape skins, meat, stems, and seeds.

They rest in non-GMO neutral grain spirit for two and a half weeks, are strained, and proofed down to 40% abv. They’re aged in Bourbon barrels in a two-stage Solera system that averages one year in age come bottling. It’s sweetened with a blend of organic dark clover honey and organic cane sugar and bottled. Delicious neat with lemon peel and equally enticing in a Saw Tooth cocktail.

Brooklyn, NY - 750ml Bottle - 22% ABV From the distillery: This amaro is named after my grandmother, Lena Pianta. She loved southern Italian spirits and we think this one would’ve made her bar cart. A blend of 13 botanicals including gentian, rhubarb root, fennel seed, and sweet and bitter orange rest for 3 weeks in non-GMO neutral grain spirit. The mixture is proofed down to 40% abv and barrel aged in used whiskey barrels for a minimum of 3 months. When we feel it’s ready to go, we filter it from the barrels and sweeten it with organic cane sugar as well as organic caramel color. We add further fresh orange peel and let that sit for another several days. It’s strained again and bottled. We love it on the rocks with an orange peel but it shines in a Paper Plane cocktail.

Our Carciofo is made from a blend of 19 herbs and botanicals with neutral grain spirit from Buffalo, NY. We take fresh artichokes from the Central Valley in California and macerate them for 10 days alongside warm spices like cinnamon, allspice, and dandelion root. Lemon peel and bay leaf round out the blend that’s sweetened with organic cane sugar.

Pete would make tinctures for my grandmother when she needed some digestive aid and my line cook buddies, well, we needed relief after a long night of service. We blend 21 ingredients including saffron, myrrh, aloe ferox, peppermint, and gentian root in non-GMO neutral grain spirit for two weeks. We add water and filter, then add sugar and organic peppermint oil and bottle. This fernet has far less sugar than the bigger brands and is naturally colored with roasted chicory root. Enjoy neat or in a Toronto cocktail.

Right before distillation, we peel fresh ruby red grapefruits by hand and add thinly cut peels, giving our gin its unique citrus flavor. The spirit is allowed to rest for several weeks after distillation so the flavors can fully develop and come together before bottling. Our gin is non-chill filtered and some cloudiness may appear at colder temperatures. This is caused by the essential oils from our selection of botanicals. We reimagined our standard gin by adding a smoke element and barrel aging. The grapefruit peel was smoked over pecan wood, giving a nice smokey candied pecan note to the gin. From here, the gin was aged for 3 to 5 months in a combination of new and used cooperage to give a nice round oak flavor without dominating the spirit. The 2023 vintage has maintained our house style that started with the 2022 vintage. We fermented a portion in stainless steel with our favorite aromatic yeast strain & fermented 25% in neutral oak puncheons with native yeast to add body & complexity. We feel that this vintage is a homage to the true varietal expression of Sauvignon Blanc which shows of notes of mountain herbs, white peach, and has great minerality. The wine was rested on lees until an early bottling mid-November to preserve the fruit.

This wine is a blend of Rkatsiteli (pronounced “rah-CAT-su-telly”) and Pinot Blanc. Both of these grapes are white with flecks of red. Winemaker Andrew Backlin lets the fresh pressed juice sit in contact with a the colorful skins until the wine takes on a copper (or amber) hue. This wine is an absolute joy to drink, brimming with fresh orchard fruit flavors. There is great energy in the glass, with a focused finish that is perfect for spring fare. Modales remains one of our favorite Michigan producers, and a great place to visit the next time you’re in Fennville. But what really makes us excited about this wine is that this gorgeous wine label was created by our own Rockford Wine Steward, Mikayla Brown!

The 2023 vintage has maintained our house style that started with the 2022 vintage. We fermented a portion in stainless steel with our favorite aromatic yeast strain & fermented 25% in neutral oak puncheons with native yeast to add body & complexity. We feel that this vintage is a homage to the true varietal expression of Sauvignon Blanc which shows of notes of mountain herbs, white peach, and has great minerality. The wine was rested on lees until an early bottling mid-November to preserve the fruit.

750ml Bottle - Fennville, MI “Contact” is an estate grown Amber Wine made with native yeast and bottled without filtration. This wine is a blend of Rkatsiteli (pronounced “rah-CAT-su-telly”) and Pinot Blanc. Both of these grapes are white with flecks of red. Winemaker Andrew Backlin lets the fresh pressed juice sit in contact with a the colorful skins until the wine takes on a copper (or amber) hue. This wine is an absolute joy to drink, brimming with fresh orchard fruit flavors. There is great energy in the glass, with a focused finish that is perfect for spring fare. Modales remains one of our favorite Michigan producers, and a great place to visit the next time you’re in Fennville. 750ml Bottle - Chicago - 40% ABV From the distillery: For our Cherry Brandy, we use a tart style of cherry commonly found in Michigan and Wisconsin. The cherries are smaller and less sweet than most of the varietals we think of when we purchase cherries from the grocery store. We work to make sure that the pits are extracted from all of the cherries so that there are no off or bitter flavors that transfer into the eau de vie. The pits are added back into the mash during the three week fermentation period, which helps to create a deep and rich spirit with lots of dimension.

We add further fresh orange peel and let that sit for another several days. It’s strained again and bottled. We love it on the rocks with an orange peel but it shines in a Paper Plane cocktail.

Waukegan, IL - 750ml Bottle - 45% ABV From the distillery: The Barrel Reserve Old Tom Gin is the first spirit in our Experiment Collection. We reimagined our standard gin by adding a smoke element and barrel aging. The grapefruit peel was smoked over pecan wood, giving a nice smokey candied pecan note to the gin. From here, the gin was aged for 3 to 5 months in a combination of new and used cooperage to give a nice round oak flavor without dominating the spirit. Lastly, we cold smoked maple and agave syrups to transform the gin into an old tom gin and punch up the smoke profile.

The 2023 vintage has maintained our house style that started with the 2022 vintage. We fermented a portion in stainless steel with our favorite aromatic yeast strain & fermented 25% in neutral oak puncheons with native yeast to add body & complexity. We feel that this vintage is a homage to the true varietal expression of Sauvignon Blanc which shows of notes of mountain herbs, white peach, and has great minerality. The wine was rested on lees until an early bottling mid-November to preserve the fruit.

This wine is a blend of Rkatsiteli (pronounced “rah-CAT-su-telly”) and Pinot Blanc. Both of these grapes are white with flecks of red. Winemaker Andrew Backlin lets the fresh pressed juice sit in contact with a the colorful skins until the wine takes on a copper (or amber) hue. This wine is an absolute joy to drink, brimming with fresh orchard fruit flavors. There is great energy in the glass, with a focused finish that is perfect for spring fare. Modales remains one of our favorite Michigan producers, and a great place to visit the next time you’re in Fennville. 750ml bottle - Old Mission Peninsula From the producer: We began experimenting with the Austrian grape Blaufränkisch in 2000 on a single acre vineyard on Old Mission Peninsula. The grape has proven to be a perfect fit for our northern climate, so we began actively seeking sites around Old Mission and Benzie county to plant more and expand our Blaufränkisch program. This vintage contains all three of our OMP vineyards. 2022 was a warm vintage with a beautifully sunny autumn. We aged this wine in traditional French Oak barrels, 500L puncheons, and, for the first time, in ceramic eggs. The contributions from each vessel gave us a finished wine with structure, fresh fruit, and spicy texture 9 months in oak barrique, puncheon, and ceramic egg. 100% Blaufrankisch

750ml bottle - Pullman, Mi A field blend of five different clones of Merlot contributes to the elegance of this wine. The dark blackberry and black cherry nose leads to similar flavors and a silky body with notes of baker’s chocolate in the finish. It is boisterous and friendly and just plain good in the glass right now, but will also emerge from a short nap in the cellar with an increased complexity of its more earthy, woodsy flavors.

Aromas and flavors of lychee and pear, tapioca, white flowers, and green mango and pineapple with a round, vibrant, dryish medium body and a tingling, layered, medium-length finish with overtones of lychee, flowers, tart tropical fruits and melon, and ginger and pixie stix. Gewurztraminer dominates on the nose in a pleasant way and is balanced with Riesling acid and fruit on the palate with some of the Pinot Grigio; A lovely example of the sum being better than the individual parts without losing sense of each component.

750ml bottle - Lake Michigan Shore, MI From the producer: This wine is labeled “Non Affecte” meaning “un-affected” in French. The wine is purposely fermented in stainless steel, never seeing an oak barrel. This allows us to release the wine earlier and capture the fresh fruitiness of the Chardonnay grape. Slowly fermenting over the cold winter months, 'Sur Lie', adds subtlety, depth and complexity to the wine. Flavors of bright pear, golden apples, and creamy lemon curd.

750ml bottle - Lake Michigan Shore From the producer: It has taken a few years to understand Michigan Sauvignon Blanc for us, it’s not New Zealand & it’s not California. It’s Pure Michigan! The 2023 vintage has maintained our house style that started with the 2022 vintage. We fermented a portion in stainless steel with our favorite aromatic yeast strain & fermented 25% in neutral oak puncheons with native yeast to add body & complexity. We feel that this vintage is a homage to the true varietal expression of Sauvignon Blanc which shows of notes of mountain herbs, white peach, and has great minerality. The wine was rested on lees until an early bottling mid-November to preserve the fruit.

750ml Bottle - Fennville, MI “Contact” is an estate grown Amber Wine made with native yeast and bottled without filtration. This wine is a blend of Rkatsiteli (pronounced “rah-CAT-su-telly”) and Pinot Blanc. Both of these grapes are white with flecks of red. Winemaker Andrew Backlin lets the fresh pressed juice sit in contact with a the colorful skins until the wine takes on a copper (or amber) hue. This wine is an absolute joy to drink, brimming with fresh orchard fruit flavors. There is great energy in the glass, with a focused finish that is perfect for spring fare. Modales remains one of our favorite Michigan producers, and a great place to visit the next time you’re in Fennville. But what really makes us excited about this wine is that this gorgeous wine label was created by our own Rockford Wine Steward, Mikayla Brown!

500ml bottle - Wisconsin - 6.7% ABV From the producer: Tremlett’s is a blend of Geneva Tremlett’s Bitter – a tannic and tart (aka bittersharp) cider apple that lives up to its name, with the sweet and aromatic Priscilla apple. Cider connoisseurs immediately recognize that this cider is special. It is also a limited release–until, that is, we get more of this unusual yet fabulous bittersharp apple grafted, planted and bearing. This winter’s release while dry has more fruity and floral notes than past releases. Aromas are of pome fruits, apple skin, lemon and honeysuckle. On the palate, acid and tannins are well balanced, with flavors of green grape, apricot and subtle minerality.
